• Lactobacillus plantarum & Lactobacillus brevis → probiotics, gut health, same as in pineapple.

• Acetobacter (in small amounts) → converts alcohol into acetic acid, keeps balance in acidity.

• Saccharomyces cerevisiae (wild yeast) → carbonation, slight alcohol.

• Zygosaccharomyces bailii → very resistant yeast, ensures stable fermentation.
